Hearty Ham And Potato Soup

Ingredients
4 cloves garlic, chopped
1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 cup onion, chopped
1/4 cup butter
1/2 cup flour
6 cups chicken broth
dash of thyme
1 bay leaf
dash of white pepper
1 cup ham, chopped
1 lb yukon gold potatoes, diced 1/2 inch
Directions
1. In a dutch oven over medium heat melt butter and add garlic, carrots, celery and onion. Saute for 2 to 3 minutes.
2. Add flour and cook stirring constantly about 5 minutes.
3. Add the chicken broth, thyme, bay leaf and pepper. Stir and cook until it begins to boil.
4. Add the ham and potatoes. Reduce to low heat and simmer until the liquid thickens and potatoes are tender stirring often, about 45 minutes.
