Super Cheesy Spinach Stuffed Manicotti

Super Cheesy Spinach Stuffed Manicotti recipe

8 oz manicotti, 14 shells uncooked
10 oz frozen spinach, thawed and drained
15 oz whole milk ricotta cheese
12 oz mozzarella cheese, shredded
1 cup grated parmesan cheese
1 large egg
1/2 tsp garlic powder
1/2 tsp black pepper
1 TBSP basil
For the sauce:
44 oz tomato sauce
2 TBSP garlic powder
1/2 tsp kosher salt
1/2 tsp black pepper
3 TBSP oregano
1 tsp basil
1 TBSP onion powder


1. In a large sauce pot combine all sauce ingredients, cover and simmer over low heat for about 30 minutes stirring occasionally.

2. While the sauce simmers, combine the drained spinach, ricotta cheese, egg, basil, garlic powder, pepper, parmesan cheese and 4 oz of the mozzarella cheese in a large bowl.

3. Preheat oven to 375° F and cover the bottom of a 9x13 baking dish with some of the sauce.

4. Fill the uncooked manicotti shells with the cheese mixture and place next to each other in a single row in the baking dish.

5. Pour remaining sauce over the shells and sprinkle on the remaining 8 oz of shredded mozzarella.

6. Cover the baking dish with aluminum foil and bake in the preheated oven for 50 to 60 minutes.

7. Let sit for 10 minutes before serving.
