Easy Greek Chicken Tacos

Ingredients
2 pounds boneless skinless chicken thighs, cut into bite size pices
2 TBSP olive oil
1 tsp salt
1/2 tsp pepper
12 6-inch flour tortillas, warmed
AVOCADO SAUCE:
1 avocado, pitted, peeled, and chopped
1/2 cup plain Greek yogurt
1 garlic clove, peeled and chopped
1/8 tsp salt
1/8 tsp pepper
1 tsp lemon juice
GREEK SALAD MIX:
1 Roma tomato, chopped
1/2 cup sliced kalamata olives
1/2 cup thinly sliced red onion
1/2 cup diced English cucumber
1 cup shredded romaine lettuce
1/2 tsp dried oregano
1 bell pepper, seeded and diced
4 ounces crumbled feta cheese
Directions
1. Combine the chicken, olive oil, salt, and pepper in a large bowl and toss to coat evenly. Set aside
2. Combine the AVOCADO SAUCE ingredients in a food processor and blend until smooth. Scrape into a bowl and set aside.
3. In another large bowl mix together the GREEK SALAD MIX ingredients together and set aside.
4. Heat a large skillet over medium heat. Add the chicken to the hot pan and cook, stirring occasionally, until all the chicken is cooked through, about 10 minutes.
5. Add the chicken, Greek salad mix, and avocado sauce to warmed tortillas and enjoy.
