Cajun Fish Tacos with Homemade Tartar Sauce

Ingredients
TARTAR SAUCE:
1/2 cup mayonnaise
1 TBSP freshly squeezed lemon juice
2 TBSP diced kosher dill pickles
1 TBSP capers, drained and chopped
salt & pepper
FISH TACOS:
3 cups finely shredded cabbage
1 TBSP freshly squeezed lime juice
salt & pepper
4 TBSP garlic powder
2 TBSP onion powder
2 TBSP paprika
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp cayenne pepper
2 TBSP cornstarch
1 1/2 pounds tilapia (6 4-ounce fillets)
3 TBSP peanut oil
12 6-inch flour tortillas
Directions
1. Mix together all the TARTAR SAUCE ingredients in a bowl until well combined. Season with salt & pepper to taste then cover and refrigerate until ready to use.
2. Place the shredded cabbage in a bowl with the lime juice and season with salt & pepper. Toss to coat and set aside.
3. In a shallow bowl mix together the garlic, onion, paprika, thyme, oregano, cayenne pepper, cornstarch, and 1/2 tsp salt. Pat the fish dry with paper towels then place in the spice mix. Flip the fish over a couple times and press lightly to coat the fish all over with the spice mix.
4. Heat the oil in a large cast-iron skillet over medium-high heat. When the oil is hot cook the fish until cooked through and blackened, 2 to 3 minutes per side. Transfer cooked fish to a plate.
5. Warm the tortillas and serve with the fish, cabbage, and tartar sauce.
