Asian Style Sloppy Joes

Ingredients
1 pound ground pork
1 large yellow onion, diced
1 TBSP freshly minced ginger
2 garlic cloves, minced
6 ounces (about 2/3 cup) tomato paste
1/4 cup water
1/4 cup soy sauce
1 TBSP natural peanut butter
1 TBSP lime juice
1 TBSP raw honey
1 tsp rice vinegar
1 tsp sesame oil
1/2 tsp crushed red pepper flakes
salt & pepper
4 hamburger buns
2 cups thinly sliced green cabbage
Directions
1. Add the ground pork and onion to a dutch oven or large pan over medium heat. Cook, while breaking up the pork with a spatula, until pork is cooked through and onions are softened, about 8 minutes.
2. Stir the ginger and garlic in with the pork and onion and cook until fragrant, about 15 seconds. Add tomato paste, water, soy sauce, peanut butter, lime juice, honey, vinegar, sesame oil, and red pepper flakes to the pan and stir to thoroughly combine. Reduce heat to low and simmer, stirring occasionally, about 15 minutes. Season with salt & pepper to taste.
3. Serve the meat mixture on hamburger buns with the shredded cabbage.
