Garden Veggie Burgers

Ingredients
2 cups rolled oats
1 cup canned red beans, pureed
2 TBSP soy sauce
pinch pepper
1/2 tsp salt
1 TBSP oil
1/2 cup diced bell pepper
1 cup chopped mushrooms
1/2 cup chopped yellow onion
1/2 cup grated carrots
1/4 cup sliced water chestnuts
1 TBSP chopped parsley
1/2 tsp paprika
1/4 tsp smoked paprika
1/8 tsp dried oregano
1 TBSP granulated garlic
1/4 cup oil
6 burger buns
optional toppings: lettuce, tomato,onion, etc.
Directions
1. In a large mixing bowl combine the oats, beans, soy sauce, pepper, and salt.
2. Heat a 10-inch skillet over high heat and add the oil. Saute the pepper, mushrooms, onion, and carrots for about 5 minutes or until tender. Allow to cool for 5 minutes.
3. Add the cooked vegetables, water chestnuts, parsley, paprika, smoked paprika, oregano, and garlic to the bean mixture and mix well.
4. Form the mixture into 6 patties roughly the same size as your burger buns.
5. Heat the oil in a skillet over medium heat. Add the patties and brown well on both sides, about 4 minutes per side.
6. Place the burgers on the buns and serve with your favorite toppings.

Good flavor, I would prefer to leave the water chestnuts out next time or maybe chop them up.
