Pan Seared Tilapia with Dijonaise

Ingredients
1/4 cup mayonnaise
1 tsp Dijon mustard
1 tsp whole grain mustard
1/8 tsp plus 1/4 tsp kosher salt
1/3 cup all-purpose flour
1/8 tsp black pepper
4 tilapia fillets
3 TBSP oil
2 TBSP cut chives
Directions
1. In a small bowl whisk to combine the mayonnaise, Dijon mustard, whole grain mustard, and 1/8 teaspoon of the kosher salt.
2. In a medium bowl, whisk together the flour, the remaining 1/4 teaspoon of the kosher salt and the pepper.
3. Pat the tilapia dry and dip each fillet in the seasoned flour, making sure all sides are well coated.
4. In a medium frying pan, heat the oil over medium-high heat. Add the tilapia and cook for 3 minutes per side, until it is browned and cooked through. Serve topped with the Dijon mayo. Sprinkle with chives.
