Smoky Pork and Lentil Soup

1 1/2 lbs boneless pork loin cut into 3/4 inch pieces
1/4cup water
1/8cup liquid smoke
1 TBSP garlic powder
1 TBSP onion powder
1/2 TBSP kosher salt
1 cup red lentils
1 medium red onion, diced
4 cups chicken broth
1 TBSP canola oil


1. Combine the water, liquid smoke, garlic powder, onion powder and salt in a bowl. PLace pork pieces in a large plastic ziploc bag and pour marinade over top. Seal bag and place in the refrigerator for 6 hours.

2. In a dutch oven heat oil over medium high heat and add diced onion and pork. Cook stirring occasionally about 5 minutes.

3. Add the broth and lentils and bring to a boil.

4. Turn heat to low and simmer uncovered for about 35 minutes stirring occasionally.

Good but could be better
Try simmering an additional 15 to 20 minutes for more tender pork.
