fresh corn kernels from 1 large ear of corn
1 Roma tomato, chopped small

1/2 red onion, diced
1/2 cup freshly chopped cilantro
1/4 cup olive oil
2 TBSP fresh lime juice
2 garlic cloves, minced
1 tsp cumin

Directions
1. Pick through the beans and black eyed peas and rinse them thoroughly. Place the beans and peas in a large bowl and cover with plenty of water. Place a lid on the bowl and let soak for 12 up to 24 hours.
2. Drain and rinse the beans and peas then place in a pot and cover with plenty of water. Bring to a boil over medium-high heat. 3. In a large bowl mix together the black eyed peas, black beans, jalapeno, avocado, corn, tomato, bell pepper, onion, and cilantro.
4. In a separate small bowl whisk together the olive oil, lime juice, garlic, cumin, 1/2 tsp salt, and 1/4 tsp pepper then drizzle over top and toss to combine.
5. Taste and season with extra salt & pepper if necessary. Serve with tortilla chips.
