Kale and Brussels Sprout Salad

Ingredients
Apple Cider Vinaigrette:
1/2 tsp Dijon mustard
1 tsp honey
1 TBSP apple cider vinegar
1/2 TBSP water
3 TBSP peanut oil
dash salt
pinch pepper
Salad:
2 cups stem removed and chopped kale
2 cups shaved Brussels sprouts
1 gala apple, cored and sliced
2 oz Parmesan cheese, shaved
1/4 cup sunflower seeds
Directions
1. Make the dressing by combining all the Vinaigrette ingredients in a jar and shaking well.
2. In a large bowl combine the kale, brussels sprouts, and 3 TBSP of dressing. Massage the dressing into the greens.
3. Add in the apple and sunflower seeds and toss to combine. Top with shaved Parmesan cheese.
4. Serve salad with extra dressing on the side.
