Garlic Sesame Brown Rice

Ingredients
1 TBSP peanut oil
2 large garlic cloves, minced
1 cup uncooked long grain brown rice
1 1/2 cups water
1 tsp sesame oil
2 tsp soy sauce
1 green onion, thinly sliced
Directions
1. Heat the peanut oil in a medium size saucepan over medium-high heat. Add the garlic and rice to the pan and cook while stirring for about 10 seconds. Add the water to the pan, stir to combine and bring to a boil. Cover the pan and reduce the heat to low. Simmer over low heat, without removing the lid, for 30 minutes.
2. Take the pan off the heat and let sit, keeping the lid on, for 10 more minutes.
3. Drizzle the sesame oil and soy sauce over the rice. Sprinkle in the green onion and gently toss everything together with a fork.
