Neapolitan Christmas Salad

A classic Italian salad usually served on Christmas Eve made up of cauliflower florets, olives, red onion, capers, and pickled peppers.

1 head of cauliflower cut into small florets
1/2 red onion, thinly sliced
1 cup pitted whole green olives
1 cup pitted whole black olives
1/2 cup sliced pepperoncini
1/4 cup olive oil
2 TBSP red wine vinegar
1 garlic clove, minced
2 TBSP capers
2 TBSP cup freshly chopped parsley
freshly ground pepper


1. Place the cauliflower florets in a pot and cover with water. Bring to a boil and cook until just tender but still firm, about 5 minutes. Drain the cauliflower and set aside to cool.

2. Transfer the cauliflower to a large mixing bowl. Add the onion, olives, and pepperoncini and toss with the cauliflower.

3. In a separate bowl make the dressing by mixing together the olive oil, vinegar, garlic, capers, parsley, and 1/4 tsp freshly ground pepper. Drizzle the dressing over the salad and toss to coat.
