Tropical Quinoa Salad

Ingredients
1 cup uncooked quinoa
2 cups water
salt & pepper
10 ounces frozen mango chunks, thawed
1 avocado, peeled, cored, and cut into 1/2-inch chunks
1/4 cup unsweetened shredded coconut
1/2 cup cashews
1/4 cup freshly chopped cilantro
zest and juice from 1 medium lime
Directions
1. Rinse the quinoa under cold water in a fine mesh strainer. Add the rinsed quinoa, 1/2 tsp salt, and the 2 cups of water to a medium saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer, stirring occasionally, until quinoa is tender and water is absorbed, about 20 minutes. Transfer quinoa to a large bowl and set aside to cool.
2. When quinoa is cool. Add the mango, avocado, coconut, lime zest, cashews, cilantro, and lime juice. Toss to combine and season with salt & pepper to taste.
