Grated Beet and Carrot Salad

Ingredients
2 TBSP fresh lemon juice
1 TBSP olive oil
1/4 tsp ground cumin
1/4 tsp ground cinnamon
1/8 tsp cayenne
salt & pepper
2 medium size carrots, peeled and grated
3 medium size raw beets, peeled and grated
1 medium size Granny Smith apple, peeled, cored, and grated
1/2 cup raisins
Directions
1. In a large mixing whisk together the lemon juice, oil, cumin, cinnamon, cayenne, and 1/4 tsp salt to make the dressing.
2. Add the carrot, beets, apple, and raisins to the bowl and toss to coat with the dressing. Season with salt & pepper to taste.
