Easy Creamed Spinach

Ingredients
2 TBSP unsalted butter
24 ounces frozen chopped spinach
1 yellow onion, diced
2 TBSP all-purpose flour
1 tsp garlic powder
1/8 tsp cayenne pepper
1/8 tsp ground nutmeg
salt & pepper
2 ounces cream cheese
1 cup half & half
1 cup freshly grated Parmesan cheese
Directions
1. Melt the butter in a saucepan over medium heat. Add the onion and cook, stirring often, until onion is softened, about 5 minutes.
2. Add the spinach and cook, stirring often, until spinach is heated through, about 6 minutes.
3. Add the flour, garlic, cayenne, nutmeg, and 1/2 tsp salt. Stir until thoroughly combined. Stir in the cream cheese until melted then pour in the half & half and cook while stirring until heated through, about 2 minutes.
4. Stir in the Parmesan and cook until melted and heated through, about 1 more minute. Season with salt & pepper to taste.
