Inside-Out Grilled Cheese

Ingredients
2 slices hearty white or whole-grain bread
1 TBSP unsalted butter, softened
2 ounces sharp cheddar cheese, shredded
Directions
1. Heat a large nonstick skillet or griddle over medium heat.
2. Spread the butter evenly on one side of each of the bread slices. Lay the bread slices buttered-side down in the pan for 30 seconds. Top one of the bread slices with half of the shredded cheese then place the other slice of bread on top of the cheese buttered-side up. Sprinkle half of the remaining cheese on the top of the sandwich. Flip the sandwich over and sprinkle the remaining cheese on the other side of the sandwich.
3. Cook until the cheese becomes crispy and browned, about 3 minutes. Flip the sandwich over and cook the other side until cheese is crispy and browned, about another 3 minutes.
