Bold Date BBQ Sauce

Ingredients
16 ounces Medjool dates, pitted and chopped
2 cups hot water, divided
1 1/2 cups distilled white vinegar
10 TBSP (6 ounces) tomato paste
1 TBSP smoked paprika
2 tsp salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried mustard
1/2 tsp ground black pepper
1/4 tsp cayenne pepper
Directions
1. Place the dates and 1 cup of the hot water into a food processor or blender and blend until smooth. Scrape mixture into a medium size saucepan.
2. Stir the remaining 1 cup of water and the rest of the ingredients into the saucepan with the date mixture and bring to a boil over medium-high heat.
3. Reduce heat to low and simmer, stirring occasionally, about 30 minutes.
4. Take off the heat and allow sauce to cool to room temperature.
5. Transfer sauce to jar or container with a tight fitting lid and refrigerate for about 12 hours. Makes about 3 1/2 cups of BBQ sauce.
