Simple Carrot and Onion Rice Pilaf

Ingredients
1 cup Basmati rice
1 onion, chopped
1/2 cup diced carrots
1 1/2 cups chicken broth
1/2 tsp salt
1/2 tsp fresh ground pepper
1 TBSP canola oil
1 TBSP unsalted butter
1 bay leaf
Directions
1. In a large saute pan melt the butter with the oil over medium heat.
2. Add the onion and carrots and cook, stirring occasionally, about 5 minutes.
3. Stir in the rice, salt and pepper and cook about 2 minutes, stirring occasionally.
4. Add the chicken broth and bay leaf. Stir and bring to a boil.
5. Reduce heat to low and cover. Cook for about 20 minutes or until the rice has absorbed the liquid.
6. Remove the bay leaf and serve.
