Pea and Mint Couscous

Ingredients
1 TBSP unsalted butter
1 cup frozen peas
1 garlic clove, minced
salt & pepper
1 1/4 cups water
1 cup Moroccan couscous
1 TBSP fresh lemon juice
1 tsp lemon zest
1 tsp freshly chopped mint leaves
Directions
1. Melt the butter in a medium size saucepan over medium heat. Add the peas, garlic, 1/2 tsp salt, and 1/4 tsp pepper and cook while stirring for 30 seconds.
2. Add the water to the pan and bring to a boil over medium-high heat.
3. Add the couscous to the pan. Return to a boil then cover the pan and take off the heat. Let sit off the heat while covered for 5 minutes.
4. Stir the lemon juice, lemon zest, and mint in with the couscous.
