Ingredients

1 whole chicken (6 lbs)
2 TBSP olive oil
1 tsp cayenne pepper
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp garlic powder
1 tsp paprika
1 tsp cumin
1 tsp salt
1 tsp ground black pepper

Directions

1. Preheat the oven to 450°F. Line a rimmed baking sheet with parchment paper.

2. Pat the chicken dry with paper towels and place on the lined baking sheet breast side up.

3. Mix the oil and spices together in a bowl then rub the spice mixture all over the outside of the chicken and under the skin of the breasts as best as you can.

4. Roast the chicken in the oven for 20 minutes then reduce the heat to 375°F and roast for 45 to 60 more minutes or until chicken is cooked through (165°F internal temperature).

5. Take the chicken out of the oven and allow to rest for 15 minutes before slicing and serving.
