Insane Sriracha Breaded and Baked Chicken Wings

2 1/2 lbs chicken wings, about 20
4 cups dry bread crumbs
3 TBSP sriracha powder
2 TBSP garlic powder
1 TBSP chili powder
1 tsp salt
1 TBSP oil
2 large eggs
1 TBSP mayonnaise
1 TBSP hot sauce


1. Preheat oven to 400° F.

2. Pat chicken wings dry with paper towels and set aside.

3. In a large bowl mix the bread crumbs, sriracha powder, garlic powder, chili powder, salt and oil.

4. In a separate large bowl beat the eggs and mix in the mayonnaise and hot sauce.

5. Pour half the bread crumb mix on the bottom of a 9x13 dish and spread evenly.

6. Dip the wings in the egg mixture turning them to completely coat. Shake off excess egg and place the wings on top of the bread crumbs in the baking dish. Repeat with all the wings.

7. Pour the remaining bread crumbs on top of the wings in the dish and press to help the bread crumbs stick to the wings.

8. Line a sheet pan with aluminum foil and place a wire rack on top.

9. Place the breaded wings on the wire rack and bake in the preheated oven for 1 hour.


WARNING: These wings will be VERY SPICY!
For a more sane spiciness reduce the sriracha powder to 1 TBSP.
