Stovetop Banana and Peanut Butter Oatmeal

Rich and creamy steel cut oatmeal infused with peanut butter, cinnamon, and fresh banana then topped with chopped walnuts.

Stovetop Banana and Peanut Butter Oatmeal

Ingredients

1 large ripe banana, peeled and mashed
3 cups whole milk
1/2 tsp ground cinnamon
1 cup steel cut oats
1/4 cup natural peanut butter
chopped walnuts for topping


Directions

1. Combine the mashed banana, milk, and cinnamon in a large saucepan over medium-high heat. Cook, stirring often, and bring to a slight boil (make sure to keep an eye on it so it doesn't boil over).

2. Stir in the oats and reduce the heat to low.

3. Simmer, stirring occasionally, until thickened to desired consistency, 25 to 30 minutes.

4. Take off the heat and stir in the peanut butter.

5. Serve in bowls topped with chopped walnuts.
