Servings: 4
Recipe by: Frankie

3 lbs country style ribs
1 stalk celery, diced
1 onion, diced
8 oz tomato sauce
2 cups chicken broth
1/4 cup apple cider vinegar
2 bay leaves
1/2 TBSP red pepper flakes
1/2 TBSP garlic powder
1 TBSP diced jalapenos
2 TBSP cooking oil
salt and pepper

1. Preheat oven to 350° F.

2.Pat the ribs dry with paper towels and liberally season with salt and pepper.

3. Heat the oil in a large dutch oven over medium-high heat. Brown the ribs in the oil about 3 minutes per side. Remove and set aside.

4. Add the celery and onions to the remaining oil in the dutch oven and cook until tender, about 5 minutes.

5. Pour in the apple cider vinegar while scraping the the pan to release any bits off the bottom.

6. Stir in the tomato sauce, 1/2 tsp salt, red pepper flakes, garlic powder, bay leaves, jalapenos and chicken broth and bring to a boil. Return ribs to the pan.

7. Cover the dutch oven and place in the preheated oven for 1 1/2 hours.

8. Uncover the ribs and let cook in the oven an additional 30 minutes to brown the ribs and reduce the sauce.
