Homemade Butter

Easy to make homemade butter made with heavy cream in a food processor.

Ingredients

2 cups heavy cream, room temperature
optional: 1/4 tsp salt


Directions

1. Pour the heavy cream into a food processor.

2. Turn the food processor on and let it run until the fat solids separate from the liquid, 5 to 8 minutes.

3. Use a rubber spatula to scrape the solids into a fine mesh strainer. Press the solids (the butter) in the mesh strainer with the rubber spatula to press out any liquids (see notes below).

4. Transfer the butter to a container. If making salted butter stir in the salt.

5. Refrigerate until ready to use or store in the freezer for up to a few months. Makes about 1 cup of butter (equal to 16 TBSP or 1/2 pound or 2 sticks).

Notes/Tips

The leftover liquid can be saved and used as a buttermilk substitute by adding 1 TBSP of lemon juice or white vinegar to each cup of the liquid.
