1 lb Beef Eye Round, cut 1/4 x 1/4 x 1 inch
1/2 cup pearl barley
Kosher Salt & Black pepper
1 TBSP Vegetable Oil
1 tsp Granulated garlic
10 Cups Water
3 small Carrots, peeled and diced
4 ribs Celery, diced
1 small Yellow Onion, diced
1 Bay Leaf
1/16 tsp Thyme leaves, dried
2 tsp Beef Better than Bouillon


1. Season the beef with salt and pepper.

2. Heat a soup pot over medium-high heat with oil and sear the beef and til well browned.

3. Add the granulated garlic and the water and bring to a boil. Reduce heat to a simmer and simmer for 1 hour.

4. Add the veggies, herbs and barley and cook another hour stirring occasionally.

5. Add the Better than Bouillon and cook 10 minutes. Taste and season with salt and pepper as needed.
