Spicy Chicken Breasts with Peanut Sauce

Ingredients
ASIAN PEANUT SAUCE:
2/3 cup rice vinegar
1 TBSP soy sauce
2 garlic cloves, chopped
1-inch pieces of ginger, chopped
3 ounces (6 TBSP) chili garlic sauce
3 ounces (6 TBSP) peanut butter
1 TBSP sriracha sauce
1/4 cup peanut oil
CHICKEN AND GARNISH:
2 chicken breasts, boneless, skinless
1 TBSP freshly sliced cilantro
2 TBSP chopped peanuts
Directions
ASIAN PEANUT SAUCE :
1. Put all ingredients EXCEPT OIL into a food processor or blender and blend until well combined.
2. With the blender running slowly drizzle in the oil then blend until completely smooth, about 30-60 seconds.
CHICKEN:
1. Marinate the chicken breasts in 1/2 cup of the Asian peanut sauce for about 20 minutes.
2. Remove chicken from marinade and cook in a non-stick skillet over medium heat until cooked through, about 5-8 minutes per side. Discard any remaining marinade.
3. Transfer chicken to a cutting board and let rest for 10 minutes.
4. Slice the chicken and garnish with cilantro and peanuts. Serve with the peanut sauce on the side.
