4 boneless pork cops, 4 to 5 oz each about 1/2 inch thick
1 cup crush saltine crackers
1 tsp black pepper
1 tsp smoked paprika
1 egg
1 tsp yellow mustard
4 TBSP unsalted butter, melted
salt and pepper


1. Preheat oven to 425° F.

2. Pat pork chops dry and season both sides with salt and pepper.

3. Mix the egg and mustard together in a bowl. In a separate bowl combine the crackers, paprika and pepper.

4. One by one dip the chops in the egg mixture then into the crumb mixture making sure to coat the entire pork chop.

5. Cover bottom of a 9x13 baking dish with 1 TBSP of the butter.

6. Place chops in the baking dish and pour remaining butter evenly over top of the chops.

7. Bake for 10 minutes in the preheated oven. Turn and cook an additional 10 minutes.

Could use more crunch
Chops came out a little soggy, maybe cut the amount of butter in half next time.
