1/2 lb mild Italian sausage
1 onion sliced
1/2 lb penne pasta
1/2 cup white wine
2 garlic cloves, minced
1/2 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
1 TBSP unsalted butter
1/2 cup Parmesan cheese, grated
1 TBSP red pepper flakes
1/2 cup water reserved from pasta pot


1. Cook pasta according to directions, drain pasta but reserve 1/2 cup of the pasta water and set aside.

2. Break up sausage and brown in a dutch oven over medium heat, about 3 minutes.

3. Add the mushrooms and onions and cook about 5 minutes, stirring occasionally.

4. Stir in the butter, garlic, thyme, salt and pepper and cook for about 1 minute.

5. Reduce heat to medium-low and add the wine, cook for 5 to 10 minutes or until wine has completely reduced.

6. Stir in the cooked pasta, red pepper flakes and the 1/2 cup reserved pasta water.

7. Sprinkle top with the grated Parmesan cheese.
