Korean Slow Cooker Pork Ribs

Ingredients

2 1/2 lbs country style ribs, bone-in
1/2 cup chili garlic sauce
2 TBSP soy sauce
2 garlic cloves, minced
2 TBSP ginger root, minced
2 TBSP red pepper flakes
3 TBSP rice vinegar
1/2 onion, diced
2 TBSP cooking oil
1/2 cup green onion, sliced
1 1/2 cups white rice, cooked

Directions

1. Pat ribs dry with paper towels and season liberally with salt and pepper.

2. Mix the chili garlic sauce, soy sauce, garlic, ginger, red pepper flakes and rice vinegar in a bowl and set aside.

3. Heat the oil in large pan over high heat until it begins to smoke. Sear the ribs on both sides, about 8 minutes total.

4. Spoon about 2 TBSP of the sauce mix on the bottom of a slow cooker. Place the ribs on top of the sauce. Pour in the diced onions and then the rest of the sauce mix over the ribs.

5. Cover the slow cooker and cook on low for 6 to 7 hours.

6. Discard all the bones from pork.

7. Serve over a bed of white rice and top with the green onions.
