Korean Slow Cooker Pork Ribs

Ingredients
- 2 1/2 lbs country style ribs, bone-in
- 1/2 cup chili garlic sauce
- 2 TBSP soy sauce
- 2 garlic cloves, minced
- 2 TBSP ginger root, minced
- 2 TBSP red pepper flakes
- 3 TBSP rice vinegar
- 1/2 onion, diced
- 2 TBSP cooking oil
- 1/2 cup green onion, sliced
- 1 1/2 cups white rice, cooked
Directions
- Pat ribs dry with paper towels and season liberally with salt and pepper.
- Mix the chili garlic sauce, soy sauce, garlic, ginger, red pepper flakes and rice vinegar in a bowl and set aside.
- Heat the oil in large pan over high heat until it begins to smoke. Sear the ribs on both sides, about 8 minutes total.
- Spoon about 2 TBSP of the sauce mix on the bottom of a slow cooker. Place the ribs on top of the sauce. Pour in the diced onions and then the rest of the sauce mix over the ribs.
- Cover the slow cooker and cook on low for 6 to 7 hours.
- Discard all the bones from pork.
- Serve over a bed of white rice and top with the green onions.
