Smoked Sausage and Cabbage with a Mustard Vinaigrette

Ingredients
1 head green cabbage, finely cut
1 onion, diced
1 lb smoked sausage cut into 2 inch pieces
1 lb red potatoes, quartered
1 tsp kosher salt
1/4 tsp mustard powder
1/2 tsp coriander
1/4 tsp dill
1 bay leaf
2 tsp apple cider vinegar
1 tsp cooking oil
Directions
1. Boil potatoes until tender, drain and set aside.
2. Brown the sausage in a dutch oven with the oil over medium heat. Add the cabbage and onion and cook until the cabbage has wilted, stirring often.
3. Stir in the salt, mustard powder, coriander, dill and bay leaf and cook for 3 minutes.
4. Take off the heat and add the vinegar.
5. Serve the cabbage and sausage over the boiled potatoes and drizzle with mustard vinaigrette.
