Chicken and Black Grape Crostinis
Servings: 5
Ingredients
2 chicken thighs roasted and shredded discarding bones and skin.
30-40 black seedless grapes, halved lengthwise
1 baguette
2 TBSP cooking oil
8oz cream cheese at room temperature
1/4 tsp thyme
1/4 tsp kosher salt
dash of white pepper
table salt and ground black pepper
Directions
1. Preheat oven to 375°F. Cut baguette into 1/4 inch slices(about 25 pieces, you'll have leftover bread).
2. Lay the baguette slices on a baking sheet and brush both sides of the bread slices with the oil. Sprinkle on table salt and ground black pepper.
3. Bake bread slices for about 8 minutes in the preheated oven. Flip over and let cool on the baking sheet.
4. Put the cream cheese, thyme, kosher salt and white pepper in a bowl and mix with a mixer until fluffy.
5. Add the shredded chicken and mix for another 30 seconds or until well combined.
6. Top each bread slice with about 1 TBSP of the chicken mix then 3 grape halves cut side down.
7. Serve immediately, makes about 25 crostinis.
