Rosemary Parmesan Rice

Ingredients
1 medium onion, diced
1 TBSP oil
1 cup Jasmine rice
1 TBSP butter
1 1/2 cup Chicken Broth
1/2 tsp Rosemary Leaves
dash white pepper
1/4 cup fresh grated Parmesan cheese
Directions
1. Heat oil in a 2 quart sauce pan. Add the onion and cook over medium heat for about 2 minutes.
2. Add rice and cook 2 minutes more.
3. Add the butter, broth, white pepper and rosemary and bring to boil.
4. Cover the pot and reduce heat to the lowest low temperature, simmer 20 minutes DO NOT LIFT THE LID.
5. Still leaving the lid on top, DO NOT LIFT THE LID,turn off the heat and allow rice to rest 10 minutes still covered.
6. Lift the lid, fluff rice with a fork and stir in the Parmesan cheese. Taste and season with salt & pepper if you wish.

5. Still leaving the lid on top, DO NOT LIFT THE LID,turn off the heat and allow rice to rest 10 minutes still covered.
6. Lift the lid, fluff rice with a fork and stir in the Parmesan cheese. Taste and season with salt & pepper if you wish.
