Lemon Chicken
Servings: 3
Ingredients
3 bone-in chicken thighs
Kosher salt & black pepper
1 TBSP oil
1 TBSP flour
1/2 tsp rosemary leaves
1/2 tsp oregano
Zest of a lemon
1/4 cup lemon juice
1 cup chicken broth
1 package gelatin
1.5 TBSP cold water
1.5 TBSP cornstarch
Directions
1. Preheat oven to 450 degrees F.
2. Sprinkle the gelatin over the chicken broth and set aside.
3. season the chicken with Kosher salt and pepper.
4. Heat oil in a 12 inch skillet over medium high heat until it begins to smoke. Add chicken thighs skin side down and sear for 2-5 minutes or until well browned.
5.. Turn thighs over. Carefully add the chicken broth, taking care to pour without moistening the chicken skin.
6. Add the rosemary and oregano and put into the preheated oven. Bake 30 minutes or until the internal temperature reaches 165 degrees F.
7. Remove the chicken from pan and allow to rest in a serving dish. Place the pan back on the stove and bring the liquid to a boil.
8. Mix the cornstarch and cold water together and whisk into boiling liquid. whisk until thickened, about 1-2 minutes.
9. Strain the sauce if you wish.
10. Now serve sauce on the side or Carefully add the it to the serving dish, taking care to pour without moistening the chicken skin.
