Simple Rustic Veggie Barley Soup

Ingredients
1 cup chopped carrots
1 cup chopped celery
2 cups chopped onion
1 cup chopped red peppers
1 TBSP granulated garlic
1/2 cup barley
5 cups vegetable broth
5 cups water
1/2 tsp basil
1 bay leaf
1/2 tsp oregano
1/8 tsp thyme
1 tsp parsley
1/8 tsp white pepper
1 cup frozen spinach
salt and pepper
Directions
1. Put all ingredients except for spinach in a large pot and bring to a boil over medium-high heat.
2. Reduce heat and simmer, stirring occasionally, partially covered for 60 to 90 minutes or until barley is tender.
3. Stir in spinach.
4. Add salt and pepper and adjust seasonings to taste.
