Fresh Tomato Pizza Sauce

Ingredients
2 TBSP olive oil
2 pounds roma tomatoes
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
1/4 tsp crushed red pepper flakes
salt & pepper
Directions
1. Use a sharp knife to cut a shallow X mark on the bottom (the opposite side of where the stem would be) of each tomato.
2. Bring a large pot of water to a boil.
3. Add the tomatoes to the boiling water and boil for 1 minute then use a slotted spoon to transfer the tomatoes to a large bowl of ice water.
4. When the tomatoes are cool enough to handle peel off the skins, the skins should peel off easily starting from where you cut an X mark.
6. Roughly chop the tomatoes and set aside.
5. Empty any water from the pot and heat the oil in it over medium-high heat. When the oil is hot add the tomatoes and cook, breaking up the tomatoes with a spoon or spatula as they cook, until the tomatoes begin breaking down, about 3 minutes.
7. Reduce heat to low and stir in the garlic, oregano, basil, parsley, crushed red pepper, and 1/2 tsp salt. Simmer over low heat, occasionally stirring and breaking up the tomatoes, about 20 minutes.
8. Taste the sauce and season with additional salt & pepper if necessary. Makes about 2 cups (16 ounces) of pizza sauce.
