Coriander and Mustard Marinated Pork Roast

Ingredients
2 1/2-3 lb pork roast (top loin)
1 TBSP coriander seeds
1/2 tsp granulated garlic
1 bay leaf
dash white pepper
2 TBSP whole grain mustard
1 TBSP apple cider vinegar
3 TBSP Oil 1/4 cup plain yogurt
Directions
1. Blend all the dry spices in a grinder until powdery. Add the wet ingredients and pulse together.
2. Place pork into a gallon zipper bag and coat with marinade. Allow to marinate overnight in the fridge.
3. Preheat oven to 500. Place a sheet of foil onto a baking sheet and top with a wire rack.
4. Remove pork from bag and liberally season with salt.
5. Roast at 500 degrees for 30 minutes. Reduce heat to 400 and roast 15-30 minutes more or until the internal temperature reaches 145 degrees F.
6. Allow to rest 15 full minutes.
7. Slice and devour.
