Curry Roasted Vegetables

Ingredients
2 cups carrots, sliced
2 cups cauliflower, 2-3 inch florettes
2 cups potatoes, 1 1/2 - 2 inch dice
1 cup red onion, 1 1/2 - 2 inch dice
1/2 tsp granulated garlic
1/4 tsp ground coriander
1/2 tsp cilantro leaves
1 TBSP curry powder
1/4 tsp black pepper
1/2 tsp salt
1/2 tsp cumin
dash smoked paprika
dash red pepper flakes
2 TBSP oil
Directions
1. Preheat oven to 400 degrees F.
2. Toss all ingredients together in a bowl.
3. Place on a greased baking sheet.
4. Roast in oven 30 minutes, turn pan half way through cooking
