Homemade Refried Beans

Ingredients
1 pound dried pinto beans
1 yellow onion, finely chopped
4 garlic cloves, minced
8 cups water
2 TBSP chili powder
1 tsp ground cumin
salt and pepper
Directions
1. Rinse the beans thoroughly under cold water. Transfer then beans to a dutch oven or large pot along with the onion and garlic. Pour in the water and stir to combine then bring to a boil over high heat.
2. Place a lid on the pot and reduce the heat to medium-low. Simmer for 90 minutes, stirring occasionally, until beans are very tender.
3. Place a colander over a large pot or bowl and drain the beans reserving the liquid. Transfer the drained beans to a large bowl and set the reserved liquid aside.
4. Mash the beans with a potato masher while adding the reserved liquid a little at a time until beans are well mashed and desired consistency. stir in the chili powder, cumin, and 1 tsp salt. Taste and add additional salt & pepper if neccessary.
