Roasted Tandoori Style Chicken Thighs

Total Time: 1 hour to marinate 45 minutes to cook
Ingredients
4 bone-in skin-on chicken thighs
1 cup plain yogurt
1 TBSP lemon juice
1 TBSP ground coriander
1 tsp cumin
1/2 tsp fresh ginger, minced
1/2 tsp cayenne pepper
1 1/2 tsp salt
1/2 tsp fresh ground pepper
Directions
1. Combine all ingredients in a large shallow dish making sure to coat all sides of the chicken thighs.
2. Cover and refrigerate for 1 hour.
3. Preheat oven to 425°F.
4. Place thighs on a baking sheet spread out skin side up. Roast in the preheated oven for 40 minutes.
5. Remove thighs from oven, turn oven to broil. Broil chicken thighs for 4 minutes or until skin begins to char.
