Sweet Chili Braised Country Style Ribs

Ingredients

3 lbs boneless country style ribs
1 large onion, sliced
10 oz bottle Thai sweet chili sauce
1/2 cup water
2 TBSP cooking oil
salt and pepper

Directions

1. Preheat oven to 350°F

2. Pat the ribs dry with paper towels and liberally season with salt and pepper.

3. Heat the oil in a dutch oven over high heat until it begins to smoke.

4. In two batches brown the ribs for 3 minutes, flip and cook an additional 3 minutes or until well browned. Set ribs aside.

5. Reduce heat to medium-high and add the onions. Cook 5 minutes, stirring occasionally.

6. Add the water and chili sauce to the pot and scrape the bottom releasing any stuck on bits.

7. Return the ribs to the pot and bring to a boil.

8. Cover the dutch oven and place in the preheated oven. Braise in the oven for 1 and 1/2 hours then remove the lid and braise for an additional 30 minutes to reduce the sauce.
