Meaty Mushroom Turkey Burgers

Ingredients
8 ounces cremini mushrooms, finely chopped
1 pound ground turkey, 99% lean
2 TBSP olive oil
1 pkg gelatin, 1/4 oz
1 TBSP soy sauce
1/2 cup panko bread crumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
4 slices swiss cheese
4 challah rolls
optional: sliced onion, pickles, mayo, lettuce, etc.
Directions
1. Saute the mushrooms in 1 TBSP of the oil over high heat for 3 minutes. Drain in a mesh strainer, pushing to release all liquid.
2. In a large mixing bowl combine the drained mushrooms with the ground turkey, gelatin, soy sauce, bread crumbs, garlic, onion, salt, and pepper.
3. Dived mixture into 4 equal balls and form into patties. Cover and refrigerate for 30 minutes.
4. Heat the remaining 1 TBSP oil in a large skillet over medium heat. Cook patties 4 minutes then flip and cook 4 more minutes or until an internal temperature of 165°F.
5. Place the Swiss cheese on top of each burger and allow to melt. Serve on toasted challah buns with your favorite condiment(s).
