Meaty Mushroom Turkey Burgers
Burgers made from ground turkey and sauteed mushrooms topped with Swiss cheese and served on challah rolls.

Ingredients
- 8 ounces cremini mushrooms, finely chopped
- 1 pound ground turkey, 99% lean
- 2 TBSP olive oil
- 1 pkg gelatin, 1/4 oz
- 1 TBSP soy sauce
- 1/2 cup panko bread crumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 slices swiss cheese
- 4 challah rolls
- optional: sliced onion, pickles, mayo, lettuce, etc.

Directions
- Saute the mushrooms in 1 TBSP of the oil over high heat for 3 minutes. Drain in a mesh strainer, pushing to release all liquid.
- In a large mixing bowl combine the drained mushrooms with the ground turkey, gelatin, soy sauce, bread crumbs, garlic, onion, salt, and pepper.
- Dived mixture into 4 equal balls and form into patties. Cover and refrigerate for 30 minutes.
- Heat the remaining 1 TBSP oil in a large skillet over medium heat. Cook patties 4 minutes then flip and cook 4 more minutes or until an internal temperature of 165°F.
- Place the Swiss cheese on top of each burger and allow to melt. Serve on toasted challah buns with your favorite condiment(s).
