Cajun Cheesy Smoked Sausage and Potato Bake

2 lbs yukon gold potatoes quartered
1 lb smoked sausage cut into half moons
1 tsp salt
2 TBSP butter
2 TBSP flour
1 cup whole milk
1 1/2 TBSP cajun seasoning
8 oz sharp cheddar cheese grated


1. Add the cut potatoes, sausage and salt to a large pot and cover with water. Boil over medium-high heat until potatoes are tender, about 20 to 25 minutes.

2. Drain potatoes and sausage and pour into a 9x13 baking dish. Preheat oven to 350°F.

2. In a medium saucepan melt the butter over medium high heat, stir in the flour until well combined. Slowly stir in the milk, when milk begins to boil take off heat and stir in cheddar cheese and cajun seasoning.

3. Pour cheese sauce evenly in the baking dish over top the potatoes and sausage.

4. Bake uncovered 20 to 25 minutes or until cheese is bubbly.


This recipe has only a slight cajun spice, for a more cajun kick add an additional TBSP of cajun seasoning.
