Mushroom and Pecorino Cheese Crostinis

1 lb cremini (baby bella) mushrooms chopped
12 half inch slices of tuscan bread
1 cup diced yellow onion
2 cloves of garlic minced
5 TBSP olive oil
1/2 tsp salt
1/2 tsp fresh ground pepper
1 cup grated Pecorino cheese
1/2 cup white wine


1. Preheat the oven to 350°F. Place the bread slices on a baking sheet and brush both sides with 3 TBSP of the olive oil. Bake in the preheated oven 15 to 20 minutes or until edges just start to brown.

2. In a large pan heat the remaining 2 TBSP of olive oil over medium-high heat and cook the mushrooms and onions about 8 minutes, stirring often.

3. Stir in the garlic, salt and pepper and cook for about 30 seconds or until fragrant. Add the wine and scrape the pan releasing any bits stuck to the bottom. Cook until liquid has evaporated stirring occasionally, around 5 minutes. take off the heat and stir in 3/4 cup of the Pecorino cheese.

4. Spread the mushroom mixture evenly on the baked bread slices and sprinkle on the remaining 1/4 cup of Pecorino cheese. Place back in the oven and bake for 8 minutes.
