1 lb chorizo sausage
1 poblano pepper diced
1 cup diced onion
7 oz can chipotles in adobo sauce
7 oz water
1/2 tsp salt
1 avocado diced
6 oz shredded pepper jack cheese
sour cream
shredded lettuce
juice from 1 lime
12 tortillas or hard taco shells


1. In a large pan or dutch oven cook the chorizo, poblano and onion over medium-high heat about 6 minutes breaking up the chorizo as you cook.

2. Open the can of chipotles and dice them up. Add the diced chipotles and the sauce to the chorizo mixture. Stir in the water and salt and bring to a boil. Reduce heat to low and simmer for around 30 minutes or until most liquid is gone.

3. Spoon meat mixture into tortillas then top with the cheese, lettuce, sour cream, avocado and lime juice.
