2 lbs potatoes cut in 1/2 inch cubes
3 hard boiled eggs, chopped
1/4 cup red onion, finely diced
1/2 cup celery, finely diced
1/4 cup pickles, finely diced
3/4 cup mayonnaise
1/4 cup prepared mustard
1/4 cup sour cream
kosher salt
ground pepper


1. Cover diced potatoes with water in a pot and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.

2. Drain potatoes and pour into a large mixing bowl. Stir in remaining ingredients and add salt and pepper to taste.

3. Cover and refrigerate 12 to 24 hours to allow potato salad to chill and flavors to meld.
