1/2 lb ground beef
1/4 medium yellow onion
1/4 tsp salt
1 TBSP chili powder
1/2 TBSP garlic powder
1 tsp cayenne
1 tsp cumin
1/2 tsp paprika
5 oz monterey jack cheese shredded
4 6-inch flour tortillas
1 cup enchilada sauce

1. Add beef and onion to medium sauce pan and brown beef breaking it up into small pieces with a spatula, about 10 minutes.

2. Turn heat to low and add salt, chili powder, garlic powder, paprika, cayenne and cumin. Stir and cook over low heat about 5 more minutes. Set aside.

3. Preheat oven to 400 degrees F.

4. Cover bottom of a 9x9 baking dish with a 1/4 of the enchilada sauce.

5. Roll tortillas with 1 1/2 oz of the beef mixture and 1 oz cheese. Place in the baking dish seam side down. Repeat with remaining tortillas.

6. Pour remaining sauce on top of tortillas and sprinkle remaining cheese on top of sauce.

7. Cover with foil and place in oven for about 25 minutes.
