Three Cheese Spinach & Garlic Pizza

Ingredients

For the dough:
1 packet active dry yeast(1/4 oz or 2 1/4 tsp)
1 cup warm water
1 TBSP honey
3 cups all-purpose flour
1 TBSP cooking oil plus a little extra
1 tsp salt
For the toppings:
6 oz pepper jack cheese, shredded
6 oz mozzarella cheese, shredded
1/4 cup fresh grated parmesan cheese
1 lb frozen spinach, thawed and drained
2 TBSP olive oil
1 to 2 medium cloves garlic, minced (about 1/2 TBSP)
salt and pepper

Directions

For the dough:

1. In a stand mixer or large bowl mix the yeast, honey and water. Let stand 10 minutes or until it begins foaming.

2. Add the 1 TBSP oil, salt and flour and mix until well combined and dough pulls away from sides of bowl.

3. Use a little oil to lightly cover sides and bottom of a separate large bowl.

4. Knead the dough 10 minutes by hand or about 5 minutes using a stand mixer with a dough hook.

5. Form the dough in a ball and place in the oiled bowl. Cover and put in a warm place to rise, about 30 minutes.

6. Roll out dough to a 16 inch diameter circle and place on a lightly oiled pizza pan.

For the toppings and pizza assembly:

1. In a large pan heat 1 TBSP of the oil over medium heat, add the spinach and saute for 3 minutes, stir in garlic and cook for an additional 30 seconds. Take off the heat and set aside to cool.

2. Preheat oven to 450°F. When spinach is cool mix in the cheeses and salt and pepper to taste.

3. Brush the remaining TBSP of olive oil on the pizza crust and spread the spinach and cheese mixture evenly on top.

4. Bake in the preheated oven for 15 minutes or until crust is golden brown.
