Cheesy Cauliflower Casserole

Ingredients
1 medium head of cauliflower, cut into small florets
salt & pepper
4 oz sour cream sour cream
4 oz Monterey jack cheese, shredded
1/2 cup panko bread crumbs
Directions
1. Preheat oven to 425°F.
2. Place the cauliflower florets in medium-size saucepan and cover with water. Stir in 1 tsp salt and bring to a boil over medium-high heat. Boil until tender, about 5 minutes.
3. Drain the cauliflower and place in a mixing bowl with the sour cream, Monterey jack cheese, breadcrumbs, and 1/4 tsp pepper. Stir to combine.
4. Spread mixture in an 8x8-inch baking dish and bake in the preheated oven for 30 minutes or until browned on top.
